This is an extra-aged version of one of our favorite cheeses, Brabander Goat Gouda. Every year, Dutch affineur Betty Koster chooses a very limited number of wheels to be aged out 18 months. Flavor is deep and lasting; sweetness is countered with an umami-like saltiness.
