These calissons (marzipan) are produced according to a recipe from Provence. The dough, made with a mixture of candied fruits (melon, clementine and orange), crushed almonds and a handful of bitter almonds to give character, is finely glazed and then cooked in a boiling water bath in copper cauldrons.
