Crafted by hand from milk of cows that graze in the high elevation of Benedello di Pavulo in Emilia-Romagna, wheels are then aged by Giorgio Cravero, a 5th generation affineur, in a cave at his home in Piemonte.
Cravero Parmigiano Reggiano is an exceptional, very small production Parm that we enjoy as readily on a cheese board as in a recipe. Smooth, fruity, nutty and brown buttery.
The milk for Cravero Parmigiano Reggiano comes exclusively from cows that graze near among the mountains of Benedello di Pavullo. Head cheese maker Massimo makes just ten wheels of cheese per day. After some time with Massimo, the wheels make their way to Giorgio Cravero, whose family has selected and aged Parmigiano Reggiano in Bra, Italy since 1855. Cravero’s wheels rest on pine and they turn their wheels more frequently than other affineurs to achieve a softer, richer texture.
