Every year Beni and Theresia Hollenstein leave the farm operation in the village of Brülisau sometime during the second week of June and move up to Alp Rainhütten (elevation 4,300 feet), along with their 51 milking goats. The Hollensteins make small wheels of cheese with the raw milk that is produced from their goats, who are grazing on fresh alpine pasture. Firm but creamy, flavors are sweet and grassy, with notes of toasted almond.
