The epitome of a farmstead Manchego, 1605 Manchego is produced as it would have been centuries ago - made from the farm's own raw milk, and matured with a natural (not waxed) rind. The paste has a supple, fatty texture, with sweet flavors.

Quesería 1605 takes its name from the year Don Quixote was first published, a nod to the cheesemaking traditions of La Mancha that Cervantes wrote about in Spain's most celebrated novel. The creamery sits at Finca Sierra La Solana, a ranch established in 1878 outside Herencia in Ciudad Real, and is one of fewer than ten farmstead operations in Spain still producing DOP Manchego from their own flock. Cheesemaker María José González-Román makes around 200 wheels per week, a fraction of what larger factories produce, filling each mold by hand, aging on a natural rind without wax and rotating every wheel more than fifteen times before it leaves the farm.

When you receive your cheese, unpack the order right away and refrigerate the items. We recommend using the cheese paper we wrap and ship the cheese in to store your cheese at home. A good place to store the cheese is in the salad drawer of your fridge because the moisture helps to prevent cheese from drying out while also allowing it to breathe. Always bring cheese to room temperature before serving.

More About the Producer

Queseria 1605

Finca Sierra de la Solana is a historic ranch located in the heart of La Mancha, a couple hours southeast of Madrid. Manchega sheep have been part of the landscape here for as long as anyone can remember. They're well adapted to their rugged and open high plains life with hot, arid summers and chilly winters.

Yes, when the weather and timing allow. Perishables that are sensitive to temperature are restricted to overnight or, in some cases, 2-day shipping.
