Crafted by hand with milk from the cows that graze in the high elevation of Benedello di Pavulo in Emilia-Romagna, wheels are then aged by Giorgio Cravero, a 5th generation affineur, in a cave at his home in Piedmont.

The Cravero family has been aging Parmigiano Reggiano in Bra, Piedmont since 1855. Giorgio Cravero, the fifth generation, sources his wheels from a handful of small creameries. The wheels of Parmigiano Reggiano that we sell at Talbott & Arding are sourced excluively from one of the smallest producers, Caseificio Sociale San Pietro. There, head cheesemaker Massimo, makes just ten wheels each day. Upon arrival at Cravero's aging facility in Bra, they are placed on pine boards, and turned more frequently than is the standard practice to develop a softer, richer texture. Cravero ages for peak flavor, not a fixed number of years. Five generations of that discipline is why Cravero is considered by many to be the finest Parmigiano Reggiano available.

When you receive your cheese, unpack the order right away and refrigerate the items. We recommend using the cheese paper we wrap and ship the cheese in to store your cheese at home. A good place to store the cheese is in the salad drawer of your fridge because the moisture helps to prevent cheese from drying out while also allowing it to breathe. Always bring cheese to room temperature before serving.
