For five generations, Fromageries Marcel Petite has aged Comté at Fort Saint Antoine, a former military fort perched at 1,100 meters in the Jura Mountains. Where other affineurs aged quickly, Marcel Petite pioneered slow, cool maturation, allowing each wheel to develop the complexity and nuance the cheese is capable of. Every wheel is tasted before it leaves the fort, none are sold by age alone.

Storage Tips

When you receive your cheese, unpack the order and refrigerate the items. We recommend using the cheese paper we send most of our products in to store the cheese. The cheese paper helps cover the items and stop them from drying out, while also allowing the cheese to breathe. Since cheese is mold, it's a living thing! If you cut off air circulation to the cheese, you can actually cause it to suffocate and spoil at a faster rate.

We ship via UPS within the contiguous United States. We may ship to Alaska and Hawaii at our discretion to protect the quality of perishable products. We do not ship to international addresses, PO Boxes, APOs, or FPOs.

We accept returns within 30 days of purchase.

Yes, when the weather and timing allow. Perishables that are sensitive to temperature are restricted to overnight or, in some cases, 2-day shipping.
