Ossau Iraty is one of France's oldest AOC-protected cheeses, with sheep farming records in the Pyrenees dating back to the first century. Made from the milk of Manech and Basco-Béarnaise ewes in the Ossau Valley and the Basque Irati forest, the cheese follows a tradition of transhumance that has barely changed in centuries, with shepherds moving their flocks to high mountain pastures each summer and back down in autumn. Our Ossau Iraty comes from Aramits, a small village in the Béarn region at the foot of the Pyrenees, where the cheese has been made in essentially the same way for as long as anyone can remember.

Storage Tips

When you receive your cheese, unpack the order right away and refrigerate the items. We recommend using the cheese paper we wrap and ship the cheese in to store your cheese at home. A good place to store the cheese is in the salad drawer of your fridge because the moisture helps to prevent cheese from drying out while also allowing it to breathe. Always bring cheese to room temperature before serving.

We ship via UPS within the contiguous United States. We may ship to Alaska and Hawaii at our discretion to protect the quality of perishable products. We do not ship to international addresses, PO Boxes, APOs, or FPOs.

We accept returns within 30 days of purchase.

Yes, when the weather and timing allow. Perishables that are sensitive to temperature are restricted to overnight or, in some cases, 2-day shipping.
