Made with raw cow's milk from Woodlawn Farm, wheels are in the style of a northern Italian "toma". Pawlet is washed with a salt brine, then set to age for about 3 months. The result is equally delicious for snacking, or melted into a gratin!

Woodlawn Farm is a seventh-generation dairy farm in Pawlet, Vermont, run by Seth and Kate Leach. When Consider Bardwell Farm, one of Vermont's most celebrated creameries, closed in 2019, the Leaches joined forces with Leslie Goff Tyminski, the former Head Cheesemaker from Consider Bardwell. Together, they bought the recipes and leased the equipment to start up their own cheesemaking operation. Today, Leslie makes Pawlet and Rupert under the Woodlawn Creamery name. Every wheel is made exclusively from milk produced by Woodlawn's own registered Holstein herd. A rare story of two beloved cheeses being saved rather than lost.

Storage Tips

When you receive your cheese, unpack the order right away and refrigerate the items. We recommend using the cheese paper we wrap and ship the cheese in to store your cheese at home. A good place to store the cheese is in the salad drawer of your fridge because the moisture helps to prevent cheese from drying out while also allowing it to breathe. Always bring cheese to room temperature before serving.

We ship via UPS within the contiguous United States. We may ship to Alaska and Hawaii at our discretion to protect the quality of perishable products. We do not ship to international addresses, PO Boxes, APOs, or FPOs.

We accept returns within 30 days of purchase.

Yes, when the weather and timing allow. Perishables that are sensitive to temperature are restricted to overnight or, in some cases, 2-day shipping.
