A joint venture between American cheese legend Anne Saxelby and Jasper Hill Farm, these alpine-style wheels are aged for about 6 months, before they are coated with hay from the fields surrounding Jasper Hill. They are then aged for another 4-5 months, at which point a deep, savory, umami flavor has developed. The microflora from the hay lends a very particular taste of place.

Jasper Hill Farm was founded by brothers Andy and Mateo Kehler in Greensboro, Vermont, with a mission to reinvigorate the local economy in Vermont's Northeast Kingdom. For the last 25 years, they have produced a first class variety of farmstead and artisan cheeses and collaborated closely with other producers and cheesemongers. Saxelby Cheesemongers, founded by the late Anne Saxelby, was one of the earliest champions of American farmstead cheese and worked closely with Jasper Hill to develop Calderwood.

Storage Tips

When you receive your cheese, unpack the order right away and refrigerate the items. We recommend using the cheese paper we wrap and ship the cheese in to store your cheese at home. A good place to store the cheese is in the salad drawer of your fridge because the moisture helps to prevent cheese from drying out while also allowing it to breathe. Always bring cheese to room temperature before serving.

We ship via UPS within the contiguous United States. We may ship to Alaska and Hawaii at our discretion to protect the quality of perishable products. We do not ship to international addresses, PO Boxes, APOs, or FPOs.

We accept returns within 30 days of purchase.

Yes, when the weather and timing allow. Perishables that are sensitive to temperature are restricted to overnight or, in some cases, 2-day shipping.
