A stunning cheese, hand-crafted in every way. Cheesemaker Peter Dixon creates his own rennet, and grows his own cultures to innoculate milk from the nearby Putney School. Set to age in the caves at Parish Hill, this is a true American original.

Producer Details

+

Peter Dixon has been making cheese since 1982 and is one of the most knowledgeable and influential figures in American artisan cheesemaking. Parish Hill Creamery which he founded with his wife Rachel Fritz Schaal in Westminster West, Vermont in 2013 is, according to the American Cheese Society, the only operation in the United States producing cheese exclusively with natural methods: raw milk, wild cultures propagated at the creamery, traditional rennet, and hand-harvested sea salt. Parish Hill makes cheese seasonally, only when the cows are on pasture. Multiple World Cheese Awards medals. No shortcuts.

Storage Tips

+

When you receive your cheese, unpack the order right away and refrigerate the items. We recommend using the cheese paper we wrap and ship the cheese in to store your cheese at home. A good place to store the cheese is in the salad drawer of your fridge because the moisture helps to prevent cheese from drying out while also allowing it to breathe. Always bring cheese to room temperature before serving.
